So much to do with so little time to  do it, running two businesses while trying to maintain a blog and a  social life can be quite the task sometimes.&amp;nbsp; When I was contacted by  the lovely Ben from Blend about creating a recipe to celebrate the  upcoming release of &lt;a href="http://www.facebook.com/KatieFforde"&gt;Katie Fforde's&lt;/a&gt; new book &lt;a href="http://www.amazon.co.uk/Recipe-Love-Katie-Fforde/dp/1846056527/ref=sr_1_1?ie=UTF8&amp;amp;qid=1329051792&amp;amp;sr=8-1"&gt;A Recipe for Love&lt;/a&gt;  my first reaction was Eeeeek!!&amp;nbsp; Valentines is in three days and I've  got to find time to bake up something sumptuous!&amp;nbsp; Then I got to  thinking, so many of us run such hectic lives; wouldn't it be great to  be able to bake something delicious in no time at all?&amp;nbsp; So I did, and it  was fabulous!&amp;nbsp; Not only does it look like something you could pick up  in your local French Patisserie but it's so super simple to make, anyone  could do it.&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; &lt;/i&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;250g raspberries&lt;/i&gt;&lt;/div&gt;&lt;i&gt; &lt;/i&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;1tbsp caster sugar &lt;/i&gt; &lt;/div&gt;&lt;i&gt; &lt;/i&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;200g good quality dark chocolate&lt;/i&gt;&lt;br /&gt;&lt;i&gt;250ml double cream &lt;/i&gt;&lt;/div&gt;&lt;i&gt; &lt;/i&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;50g butter&lt;/i&gt;&lt;/div&gt;&lt;i&gt; &lt;/i&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;30g liquid glucose&lt;/i&gt;&lt;/div&gt;&lt;i&gt; &lt;/i&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;i&gt; &lt;/i&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;b&gt;Method&lt;/b&gt;:&lt;/i&gt;&lt;/div&gt;&lt;i&gt; &lt;/i&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Pre heat your oven to 170C and find a fluted 20cm tart tin.&lt;/i&gt;&lt;br /&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;br /&gt;&lt;i&gt;Unroll your pastry and use to line your tin and trim any ragged edges.&amp;nbsp; Place a circle of baking paper over your pastry and fill with baking beans.&amp;nbsp; Any old dried beans will do if you don't have baking beans.&amp;nbsp; Place tart in the oven for 20 minutes then remove the paper and beans and allow to bake for another 10 minutes.&amp;nbsp; Remove the tart from the oven and allow to cool completely.&amp;nbsp;&amp;nbsp;&lt;/i&gt;&lt;br /&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;br /&gt;&lt;i&gt;Pick out a few of the best looking raspberries and set aside, you'll use these for decoration.&amp;nbsp; Mash the remaining raspberries with the sugar and spread over the base of your cooled tart.&amp;nbsp; Set aside.&lt;/i&gt;&lt;br /&gt;&lt;i&gt;&lt;br /&gt;In a small saucepan bring the double cream to the boil.&amp;nbsp; Remove the pan from the heat and add your chocolate.&amp;nbsp; Stir to melt slightly then add the butter, piece at a time stirring constantly till melted and smooth.&amp;nbsp; Squirt in the liquid glucose and mix till combined.&amp;nbsp; Pour your ganache over the raspberries making sure you don't over fill the tart.&amp;nbsp; Any left over chocolate can be chilled and used to make chocolate truffles!&lt;/i&gt;&lt;br /&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;br /&gt;&lt;i&gt;Allow the tart to cool and set in the fridge.&amp;nbsp; My idea of the perfect cookie is a big fat morsel, a crispy shell hiding a warm gooey centre, I'm talking barely warmed through.&amp;nbsp; Everything I tried were just too thin, too crispy or too greasy, not what I would ever call a decent chocolate chip cookie, or even a decent Frisbee for that matter.&amp;nbsp; That was until I discovered the queen of the kitchen, Nigella Lawson, had created a recipe which is portioned out using a quarter cup measure.&amp;nbsp; Now that's my kind of cookie!&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; Those plans were scuppered by you, Sky Arts.&amp;nbsp; For some reason or another, the Sky Arts film crew were filming a scene for an upcoming drama in the courtyard outside of my garden.&amp;nbsp; There were huge lights, cameras, generators and lots of people milling around just beyond my little garden fence.&amp;nbsp; Realising I wasn't going to get the quiet relaxing night I so craved I took myself to the kitchen for a little therapeutic baking and to keep an eye on what was going on outside, of course.&amp;nbsp;&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; Viennese Whirls were a constant favorite in my childhood home.&amp;nbsp; The cream, the jam, the delicate crumbly biscuit I mean, what's not to love?!&amp;nbsp; Sunday morning always saw us gathered round a plate of the adorable cookies, the Sunday papers scattered over the dining room table and a huge pot of tea surrounded by five mugs.&amp;nbsp; There's something about a Viennese Whirl I find so comforting, I just felt I had to delve back into my past and recreate those lazy Sunday mornings I used to love so much. Take a circular cutter, around three inches in diameter and trace 16 circles onto the parchment around one centimeter apart.&amp;nbsp; Flip the parchment over so the ink is on the bottom.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Place the butter, sugar ad flours into a food processor and pulse to combine.&amp;nbsp; Once the dough starts to come together scrape the dough into a piping bag fitted with a large star nozzle.&amp;nbsp; Pipe whirls of dough onto the lined baking tray using your stencils as a guide.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Bake cookies for 15 minutes, or until just golden and allow to cool on the tray.&amp;nbsp; Once cool sandwich the cookies together using butter cream and jam.&amp;nbsp; Eat with a pot of tea and the Sunday papers.&amp;nbsp; Slippers are essential.&amp;nbsp;&lt;/i&gt;&lt;br /&gt;&lt;/div&gt;&lt;i&gt; Upon my inquiring on the contents he handed it over and said 'it's for you'. &amp;nbsp; Excitedly, and a little suspiciously, I opened the little white box to reveal a teeny lens for my camera.&amp;nbsp; Closer inspection told me it was none other than a &lt;a href="http://shop.holgadirect.com/products/holga-nikon-camera-slr-lens-hl-n"&gt;Holga lens&lt;/a&gt; purpose built for a Nikon DSLR.&amp;nbsp; How fun! &amp;nbsp;&amp;nbsp; We already own several Holga cameras but I'm sure fellow owners will probably share my distaste for the super expensive film and the uncertainty of the image quality.&amp;nbsp; I recently came across a recipe for passion fruit curd in one of my monthly foodie reads and instantly folded the corner of the page for future reference.&amp;nbsp; And by future reference I mean the time it takes me to get to the market, buy ten passion fruits and arrive back home clutching my bounty with an excited grin on my face.&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; It really is that delicious!&amp;nbsp; I would recommend cooking the mixture for longer than the recipe states as this is quite a soft set spread and I'd prefer it a little stiffer.&amp;nbsp;&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; Scrape into a sieve set over a medium saucepan, pushing through as much pulp as you can. Reserve 2 tbsp of the seeds, then discard the rest.&lt;/span&gt;&lt;span&gt;&amp;nbsp;&lt;/span&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;span&gt;Add the remaining ingredients to the pan and set over a low heat. Whisk until all the butter has melted then, using a wooden spoon, stir constantly until the passion fruit curd has thickened to a similar consistency as lemon curd. Don't be tempted to turn the heat up to speed up the process as the eggs will curdle; make sure you stir right around the edge, too, as this is where it might catch first.&lt;/span&gt;&lt;span&gt;&amp;nbsp;&lt;/span&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;span&gt;Sieve the curd into a clean bowl to get rid of any eggy bits that may have curdled. Stir in the reserved seeds and cool, before spooning into jars and chilling. Curd will keep in the fridge for a week. They didn't rise, they had hard and cracked tops and just didn't look like a cake you'd ever want near your mouth.&amp;nbsp; I've always blamed the oven, I mean, it can't be me.... can it?&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;Since the move I've obviously gained a brand new oven, so now was the perfect time to test my hypothesis!&amp;nbsp; Was it the evil old oven with the seal hanging off (thanks mister landlord) or was it in fact, me.&amp;nbsp; Rather than following any old recipe, I took elements of all of my failed attempts and created a recipe which I believe could solve my little problem.&amp;nbsp; Set aside.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;In a bowl attached to an electric mixer whip the butter and sugar together until the mixture turns pale and creamy.&amp;nbsp; With the speed up high, add the egg and whisk for a few minutes.&amp;nbsp; Add 1/2 of the flour mixture followed by the buttermilk and colouring before adding the remainder of the flour.&amp;nbsp; Mix well to combine.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Working quickly mix the bicarb and vinegar together allowing it t fizz up slightly before adding it to the cake batter. Quickly fold in into the cake batter.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Divide the batter between the cupcake liners and bake for 23 minutes until risen and a skewer inserted into the center of each cake comes out clean.&amp;nbsp; Any new and novel way to eat something sweet and I was first in line, pocket money in my clammy, clenched fist.&amp;nbsp; So when I discovered these cupcake versions I instantly purchased the containers and baked up a batch.&amp;nbsp; Needless to say my friends were super impressed.&amp;nbsp; Ooohs and ahhhs were soon drowned out by mmmms as the adorable treats were devoured in an instant.&amp;nbsp;&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; Prague is the most stunningly beautiful place at Christmas, every door is adorned with a wreath and the scent of cinnamon lingers in the air.&amp;nbsp; I have never experienced the city at any time other than the festive season (six times and counting) but I'm hoping this Summer I shall rectify this with a trip with some close friends.&amp;nbsp; How bad was it that we started a new year on a Sunday?!&amp;nbsp; I'm sure all those good intentioned healthy eating resolutions were postponed until today.&amp;nbsp; Mine certainly were.&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;For the first time in six year, Kris and I decided to shun the parties, clubs, pubs and firework displays in favour of spending the night in our new home with only ourselves and the cats for company.&amp;nbsp; A night in with a home cooked meal, a few strawberry beers and rubbish TV was just what the doctor ordered after an exceedingly hectic festive season.&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;Our New Year was rang in with very full tummies following these delicious pots of syrupy goodness.&amp;nbsp; Reminiscent of those boil in the tin puddings from my early childhood they're simply sugary sweet tins of nostalgia.&amp;nbsp; The second I saw these puddings baked in the iconically British Golden Syrup tins I just had to try them.&amp;nbsp; I've been collecting syrup tins for months just waiting for an excuse to give them a whirl.&amp;nbsp; If, unlike me, you don't go through tins and tins of treacle you can always bake these little puds in ramekins or heatproof glass jars.&amp;nbsp;&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; Whisk butter and sugar together until light and creamy, add the eggs mixing well after each addition.&amp;nbsp; Add dates to the butter mixture before folding in the flour and baking powder.&amp;nbsp;&amp;nbsp;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Pour 2tbsp of the golden syrup into each tin, tipping as you pour to coat half way up the sides of the tin.&amp;nbsp; Divide the pudding batter between the tins and place on a baking sheet.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Bake in the preheated oven for 20 minutes or until the pudding is golden and springs back when you touch it.&amp;nbsp; Well, if you ignore the fact I've been without a fridge freezer for three weeks of course.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; No rest for the wicked, or so they say.&amp;nbsp; &lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;I've been on a bit of a coconut kick recently, I just can't get enough of the fresh flavour and satisfying crunch.&amp;nbsp; I experimented with some coconut ice cupcakes for Pet Lamb last week and decided to try out some macarons with the left over coconut.&amp;nbsp; Lets just say, the decision paid off!&lt;br /&gt;&lt;br /&gt;Sadly the pied didn't form correctly.&amp;nbsp; I put this down to the fact my baking sheet was too big for my new oven so had to bake the macarons with the door more than slightly ajar.&amp;nbsp; Time to buy some new cookie sheets if you ask me ;) &lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;&lt;span style="font-size: large;"&gt;Coconut Macarons&lt;/span&gt;&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;b&gt;Ingredients: &lt;/b&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;3 large egg whites&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;2tbsp caster sugar&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;150g of icing sugar&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;40g dessicated coconut &lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;60g ground almonds&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;&lt;i&gt;Method:&lt;/i&gt;&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Preheat oven to 150C fan and line a baking sheet with baking parchment.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Whisk the egg whites with an electric whisk until soft peaks appear.&amp;nbsp; While still whisking, pour in the caster sugar and continue to mix until sugar dissolves and the meringue is thick and glossy.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Add the icing sugar, almonds and coconut in two batches, folding the dry mix into the meringue between additions.&amp;nbsp; Try not to over mix, about 50 turns of the spoon should do it.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Transfer macaron mix into a piping bag fitted with a large, circular nozzle.&amp;nbsp; Pipe out circles of batter onto the lined tray about 1.5" in diameter leaving 2" between each macaron.&amp;nbsp; Drop the baking tray on the counter twice to flatten out the macarons and leave for fifteen minutes to form a skin.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Place macarons into the preheated oven and bake for 15 minutes.&amp;nbsp; I'm a huge lover of Neil Patrick Harris and Jason Segel so I was always going to be a big fan, I may have forced it on Kris but hey, he makes me watch all sorts of rubbish so we'll call it even!&amp;nbsp; During last nights episode the gang go in search of a burger joint which Marshall claims makes the best burgers in New York City.&amp;nbsp; After thirty minutes of witnessing five people rush around New York eating dozens of burgers we were left for an intense craving for the meaty treat.&amp;nbsp; At that point we made a decision to go on a little lunch date, a search for Newcastles best burger, if you will.&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; The food menu is nothing to be sniffed at too offering the usual pub grub but with some delightful twists such as the Proper Pub Platter with home made scotch eggs, sausage rolls and heaps of artisan bread.&amp;nbsp; I have to say, I wasn't expecting much from the risotto presuming the rise would come over cooked and the wild mushrooms would be replaced with chestnuts.&amp;nbsp; Well, I was wrong!&amp;nbsp; The rice was cooked perfectly with just the right amount of bite and the dish was studded with many different varieties of mushrooms.&amp;nbsp; The pesto dressing was a delightful addition, the only thing missing was huge shavings of Parmesan, but maybe that's just me.&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; It's super cute for a start, all pink and canny, which little girl wouldn't love this for Christmas?!&amp;nbsp; After the initial cute factor I read the instructions expecting there to be something rather complex to make the whole process unsuitable for a little person, I was wrong.&amp;nbsp; Everything about the cupcake maker is just so simple, a monkey could use it.&amp;nbsp; Oil the cavities, fill with batter, close the lid and wait.&amp;nbsp; That's it!&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; They slid out of the cavity with such ease, it was a little satisfying if I'm honest.&amp;nbsp; Now, do they stand up to the taste test?&amp;nbsp; The answer is yes, moist and taste and ready in less than ten minutes.&amp;nbsp; Line a cupcake tin with some spooky liners. In a saucepan, melt the butter over  medium-low heat. Add the sage, if desired, and continue to cook,  swirling occasionally, until butter turns golden brown. Skim foam from  top, and remove from heat. Pour into a bowl to stop the cooking, leaving  any burned sediment behind; let cool.&lt;br /&gt;&amp;nbsp;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Whisk together flour,  baking powder, salt cinnamon, nutmeg, and cloves. In another bowl, whisk  together the pumpkin puree, both sugars, eggs, and brown-butter  mixture. Add flour mixture and whisk until just combined.&lt;br /&gt;&amp;nbsp;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Divide batter evenly among lined cups, filling each three-quarters full.  Bake, rotating tins halfway through, until  cake tester inserted in  center comes out clean, about 20 minutes. Transfer tins to wire racks to  cool completely before removing cupcakes. Butter,  then line, a shallow rectangular tin, approx  25cm x 22cm. Melt the butter in a pan, then  cook gently for about 5 minutes, until the  white solids turn golden and the butter  smells biscuity and sweet. Cool for 5 minutes,  then add half the white chocolate and set  aside for a couple of minutes to melt. Stir  until smooth.&lt;/span&gt;&lt;span&gt;&amp;nbsp;&lt;/span&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;span&gt;Use electric beaters to whisk the  muscovado sugar and eggs together for  about 2 minutes until thick and pale. Tip in  the flour, salt, cooled chocolatey butter and  vanilla, then fold in with a metal spoon or  spatula until even.&lt;/span&gt;&lt;span&gt;&amp;nbsp;&lt;/span&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;span&gt;Pour the mix into the tin, then scatter with  the rest of the chocolate and the raspberries.  Bake for 40-45 minutes or until risen all over,  with a dark golden crust. Gingerbread Pecan Loaf&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Ingredients:&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;150g unsalted butter&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;150g soft dark brow sugar&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;150g golden syrup&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;200ml milk&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;250g plain flour&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;1tsp cinnamon&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;1tsp ground ginger&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;1 1/2 tsp baking powder&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;2 large free range eggs&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;50g pecans, roughly chopped&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;3 balls of stem ginger, chopped&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;2 eating apples, peeled, cored and chopped into chunks.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Method:&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Preheat the oven to 180C / 160C fan.&amp;nbsp; Grease and line a 2ltr loaf tin.&amp;nbsp; Melt the butter, sugar and syrup in a small pan, stir through the milk and allow to cool.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;Sift the flour with the dry spices and baking powder into a bowl, make a well in the center and pour in the cooled milk mixture.&amp;nbsp; Stir through with a wooden spoon using a circular motion. Fold in the eggs, pecans, ginger and apple.&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;i&gt;Pour the mixture into the prepared loaf tin and bake for 50 minutes. Cool for five minutes in the tin, the remove to a wire rack.&amp;nbsp; Serve warm, cold, toasted or slathered with cream. First, roll out some green fondant to around 5mm thick and stamp out six shapes with your medium rose cutter and lay each 'leaf' into the indentation in an artists palate (I got mine from Paperchase, 60p each).&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;Next do the same with your pink fondant and stamp out six shapes with your medium blossom cutter.&amp;nbsp; Lay the blossoms over the leaves at a slightly offset angle ensuring that you can still see a little green poking through the petals.&amp;nbsp; Give the middle of each flower a little dusting of pink luster dust and leave to set for 24 hours.&amp;nbsp; Once set, slide the flowers from their little home and you're ready to decorate!&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both;
