Pet Lamb

Hey guys, long time no see!  Thought I'd give y'all a heads up, I have a new blog!!  Awesome right?!

I'll still be posting here from time to time but the majority of my time will be spent over at the new Pet Lamb Blog.  I'm so excited to start this new venture, I've learnt alot over my years in blogsville and made tonnes of new friends.  I simply can't wait to share all of this with my new blogging partner and best friend in the world. We'll be sharing much more than recipes over at Pet Lamb, moving in more of a lifestyle direction so if there's anything specific you'd like to see, please let us know.  We can't wait to get started!

Stuffed Picnic Loaf for National Picnic Week

I can't believe it, I'm sure my eyes are deceiving me. We're actually seeing a little bit of sun up North!  The wonderful weather coincides perfectly with the guys at Unilever sending me a beautiful hamper bursting full of ingredients, with the challenge of using them to create a delicious and easy picnic recipe.  Petrified I was going to miss the sun, I decided to cobble something together from what I already had in my fridge before the clouds and drizzle descended once more.  With this in mind, this is one of the easiest and most forgiving recipes I have ever attempted, all you need is a loaf of bread and whatever you can get your greedy little mitts on. 



Here's what I did...

Stuffed Picnic Loaf

Ingredients:
1 loaf of crusty bread
1 scraping of Bertolli
2 small rounds of mozzarella cheese
1 bag of washed rocket
Handful of basil leaves
4 roasted red peppers from a jar
250g Prosciutto
250g peppered salami
250g Italian speck
1 large tomato
Squirt of Colmans garlic and chilli mayo

Method:

Cut the top off your loaf and hollow out the insides.  Keep the leftover bread for breadcrumbs.  Spread the inside of the loaf with Bertolli and layer up your ingredients.  I started off with the parma ham, mayo, rocket, tomato, cheese, basil and repeated with the different meats and finishing with red peppers. 

Once you have finished layering your ingredients replace the lid on your loaf and wrap the whole thing tightly in cling film.  Place the loaf in the fridge and pop a heavy wooden chopping board on top.  This compresses the loaf and helps everything stay together when cutting.   Leave in the fridge for 8hrs before taking on an adventure.

This is such a forgiving recipe, you can change everything and anything with what you have available.  No mozzarella, use cheddar.  No Prosciutto, just use regular sliced ham.  The possibilities are endless.

Tin Can Planters

Things have been kinda quiet over here for the past few months.  Life has been super hectic with Pet Lamb taking priority and this little blog has fell by the wayside.  I do have some exciting news, I'm currently working on a new project, a new blog even, with my best friend and business partner Kay.  The lifestyle blog for Pet Lamb will be up and running in the coming weeks and I'll be spending most of my time posting over there with more of a lifestyle feel.  Don't worry, food will still take a priority but you'll be seeing more stuff like this... Hope you enjoy :)

If you're anything like me a beautiful tin can is something that can not be passed up.  Whether it be filled with food on a supermarket shelf or nestled among china cups and teapots in a junk shop window, I just have to have it.  My collection is growing ever larger so I'm constantly looking for new ways to put them to use.  One of my favorites just has to be tuning pretty old tins into beautiful planters for herbs and flowers!





This really couldn't be any easier, all you need is a hammer, a nail and your favorite tin cans.  Simply give your container a good wash out with soapy water and leave to dry.  Turn your can over so the bottom is facing upwards, using the hammer and nail pierce the base of the can in several places.  These will act as drainage holes so your roots don't rot away.  Fill your pot around half full with potting compost, make a hole large enough for your plant to fit and delicately place your chosen plant into the hole.  Cover with a little more compost and water, just enough to soak the roots.  Pop onto your windowsill and admire your handy work.

Lychee Martini

I've always been a little bit obsessed with lychees.  Fresh, canned, juiced, I love them all.  I recently went for a meal with the in-laws to a lovely little Asian restaurant in Newcastle called Fat Buddha.  It was here my lovely sister in law (to be, if I ever stop spending the wedding fund) introduced me to the deliciousness that is a lychee martini.  Since our visit to said restaurant I haven't been able to get that delicious cocktail out of my head so I decided to collect some ingredients and toast in the New Year with a gorgeous fruity lychee martini.

Lychee Martini
(serves one)

Ingredients:
25ml vodka
25ml lychee liqueur
dash sugar syrup
75ml lychee juice

Method:
combine all the ingredients in a cocktail shaker with a handful of ice.  Shake it up, good and proper, and strain into a chilled martini glass.  Garnish with a canned or fresh lychee if you wish and enjoy.

Coconut Cream Pie Cupcakes

Life is finally starting to settle into quiet bliss; the shop has calmed down and the last Christmas market has been and gone leaving us exhausted and content.  I was starting to feel like a little bit of a scrooge this year, I haven't had the time nor energy to really think about Christmas and all of the festivities that come with it.  My decorations were still locked away in my loft and my tree stand was gathering dust in the shed, lord knows what my neighbors must have thought looking in at my bare home. Not a fairy light to be seen through my living room window.  Well, all of that changed today.  I had a word with the lovely guy who runs a nursery and sells his bonny wares up from Pet Lamb, and a stunning tree was delivered to my home this morning.  Fairy lights were strung, baubles were wrestled from the greedy paws of the cats, My living room is now suitably festive and beautifully cosy.  


In between untangling strings of glittering lights I found the time to make some delightfully moreish cupcakes.  Decorating a tree is hungry work you know.  


Making your own creme patisserie may sound daunting, but it really couldn't be easier and it's far tastier than shop bought.  Just keep a close eye on your pan and you can't go wrong.

Coconut Cream Pie Cupcakes
Makes 12 cupcakes

Ingredients:
175g unsalted butter
175g caster sugar
175g self raising flour
75g dessicated coconut
3 large eggs
1tsp baking powder
1/2tsp coconut extract
2tbsp milk

Creme Patisserie:
300ml whole milk
1tsp vanilla extract
3 large egg yolks
50g caster sugar
20g plain flour
20g cornflour

Frosting:
125g Butter
350g icing sugar
3tbsp milk
1tsp vanilla extract


For the creme patisserie:
In a medium-sized heatproof bowl, mix the sugar and egg yolks together.  Sift the flour and cornflour together and then add to the egg mixture, mixing until you get a smooth paste.
 
Meanwhile, in a saucepan bring the milk and vanilla bean just to boiling.  Remove from heat and add slowly to egg mixture, whisking constantly to prevent curdling. (If you get a few pieces of egg curdling in the mixture, pour through a strainer.) Add your vanilla extract to the egg mixture, then pour the egg mixture into a medium saucepan and cook over medium heat until boiling, whisking constantly. When it boils, whisk mixture constantly for another 30 - 60 seconds until it becomes thick. Remove from heat.  Pour into a clean bowl and immediately cover the surface with plastic wrap to prevent a crust from forming. Cool to room temperature while you get on with your cupcakes.

For the cupcakes:
Preheat the oven to 180C - 160C fan and line a cupcake tray with 12 liners.

In a large bowl mix together the flour, coconut and baking powder. Set aside.   Place the butter and sugar in an electric mixer and mix until light and creamy. Add eggs one at a time, mixing well between each addition.  Add the flour mixture in one go ensuring all the ingredients are thoroughly combined.  Stir through the milk.

Fill the cupcake liners to 2/3 full and bake for 18 - 20 minutes or until a skewer inserted into the cake comes out clean.

Allow to cool in the pan for five minutes before removing to finish cooling on a rack.  Once cool hollow out the centre of each cake using and apple corer and fill with the cool creme patisserie.

For the frosting place the soft butter and icing sugar in the bowl of an electric mixer and mix on low to combine.  Still mixing slowly add the milk until you reach the desired consistency.  Pipe or swirl onto each cake and enjoy.
